Healthy recipes are not always delicious.
That is NOT the case with this chowder recipe.
I was nearly out of points for the day and needed something really filling, so I flipped through a Weight Watchers cookbook and found this!
I made a couple modifications and my husband and I LOVED it. I’m sure you will too. This is a great recipe for students taking cooking classes online as it’s fairly easy to make but very tasty.
Bacon and Corn Chowder
Serves: 4 PointsPlus® Value: 6 (can be less if topped with less bacon)
Ingredients
- 4 slices bacon, cut into 1/2 inch pieces
- 2 Tbsp and 2 tsp water
- 1/4 onion, chopped
- 1/2 yellow bell pepper, seeded and chopped {I omitted this}
- 2 1/2 cups chicken broth {I used reduced sodium and fat free}
- 2 medium all-purpose potatoes, peeled and cubed
- 2 cups whole corn kernels {I used frozen but they recommend straight from the cob}
- 1/4 cup light cream {I subbed whole milk}
- Hot sauce, salt and pepper, to taste {I used about 2 Tbsp}
How To Make It
- In a medium nonstick saucepan over medium-high heat, ook the bacon in 2 Tbsp of water until crisp. With a slotted spoon, transfer to a paper towel; discard the liquid
- Add the onion, bell pepper and 2 tsp of water to the saucepan; saute until soft, about 5 minutes
- Add the stock and potatoes; bring to a boil. Reduce the heat and simmer, partially covered, until the potatoes are almost tender, about 10 minutes
- Stir in the corn; simmer 5 minutes longer.
- Remove from the heat; cool slightly.
- Transfer 2 cups of the soup to a food processor or blender; puree. Pour back into the saucepan; stir in the cream, hot sauce and salt and pepper to taste and heat to serving temperature
- Serve {makes 4 one cup servings}, topped with the bacon pieces
It was SO good! I loved the spice of the hot sauce and the creaminess you get by blending half of the recipe. My husband told me to “add it to the rotation!” That’s always a good sign.

Oh I LOVE this. Only a few tweaks for my pepper allergic husband and this would be PERFECT. I’m a huge proponent for using bacon as a delicious way to flavor soups, make greens taste fabulous, etc. Thanks for the tip!!
