How To Cook: Banana Bread Muffins

I love having a quick “go to” for breakfast, but it seems that most things you can bake ahead of time are loaded with sugar or butter…or both!

I loved this recipe for my friend Jody’s muffins because they were relatively healthy.  I made a few tweaks to lower the PointsPlus® value and they turned out really well!

Hopefully you like them too!

Banana Bread Muffins

Yields 18 muffins
3 PointsPlus® per muffin

Ingredients:

Dry:

  • 2 cups whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 2 Tbsp. cinnamon
  • 1/2 tsp. salt
  • Pecans *optional and will add 1 point per muffin

Wet:

  • 1/2 stick butter
  • 1 cup applesauce
  • 1/2 cup Eggbeaters
  • 3 small (or 2 large) bananas

Instructions:

  1. Mix all wet ingredients
  2. Add dry ingredients
  3. Mix well
  4. Pour evenly into greased muffin tins
  5. If you don’t fill all the holes, make sure to fill the rest with water to keep the tin evenly heated during baking
  6. Top with half a pecan, or 1 tsp of chopped pecans *Optional
  7. Bake at 350 for 25 minutes

I have never thought about or used water in the empty muffin tins. Thank you for that tip. And for including the points values! These look great.

Looks delicious. I did banana bread this week too. My isn’t low fat at all though so I’d love to try this. Mine is more of a dessert banana bread.

🙂 How many points if they are mini muffins?? I want to not feel too guilty for eating all of them!! YUM… and my whole family loved them! That is a first!
