How To Dip: Black Bean Corn Salsa

I don’t know about you, but in the summer I am constantly having to come up with side dishes to bring to various barbeques and get-togethers.

This Black Bean and Corn Salsa is one of my favorite “go-to” recipes.

It’s the perfect dip for tortilla chips or a great accompaniment to tacos or fajitas.  And I never feel bad about eating it because it’s full of vegetables!

Follow this easy recipe and you’ll be on your way to a sure hit at your next barbeque!

Black Bean and Corn Salsa


  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels – frozen, canned or fresh {I think it’s best with fresh sweet corn cut from the cob}
  • 1/2 medium sweet red pepper, chopped
  • 1/4 medium red onion, chopped {This is a STRONG flavor.  Use to your taste}
  • 1/2 cup finely diced ripe tomato {I prefer Roma tomatoes}
  • 1/4 cup chopped cilantro  *optional
  • 4 green onions, chopped
  • 2 fresh jalapeno peppers, seeded and minced
  • 2 cloves garlic, minced
  • 2 Tbsp. lime juice
  • 1 tsp. salt

Cooking Instructions

  1. In a large bowl, toss together all the ingredients.
  2. Taste, and adjust seasoning if necessary.
  3. Let sit refrigerated for at least one hour before serving.

This looks really good! Do you usually make yours with the cilantro, or do you leave it out?

I do use cilantro. I really like it. I know some people have a strong aversion to it though!
