How To Cook: Carrot Casserole

I mentioned last weekend we attended Pre-Thanksgiving with our friends.

Everyone had to bring their favorite side dish.  For me, that had to be my aunt’s famous carrot casserole.  {Well, soon to be famous now that is!}

We only get to have these carrots twice a year {Thanksgiving and Easter} and every time I can hardly wait.

As expected, everyone loved them.  So I wanted to share the recipe with all of you.

Carrot Casserole

Ingredients

  • 2 pounds carrots, peeled
  • 1/4 cup onion
  • 1 pound Velveeta
  • 48 Ritz crackers
  • 1 stick margarine
  • 3 T. milk
  • Brown sugar

Preparation

  1. Thinly slice carrots into small round circles.  {My mom always uses the food processor, and I didn’t have the attachment this time.  I recommend the food processor.}
  2. Finely chop onion.
  3. Cook onion and carrot {with water} in a saucepan until tender.
  4. Slice Velveeta.
  5. Place half the carrots and onion in the bottom of a greased 9×13 pan.
  6. Place 24 Ritz on top of carrot mixture.
  7. Top with half of the Velveeta.

  8. Sprinkle with brown sugar.
  9. Repeat with remaining ingredients.
  10. Melt margarine and stir in milk.
  11. Pour over carrots.
  12. Bake at 350° for 25-30 minutes, until golden brown and bubbly.

That’s it!

Carrots and velveeta. I never would have thought of it! Have you ever tried using any other kinds of cheese or is velveeta the only cheese that really tastes great in the recipe?

We’ve never messed with success. 🙂 I’m not sure anything else would be as good though.
