This sandwich has been one of my favorites since I was a little girl.
For a luncheon, party, or just a random dinner, it doesn’t get much better than Chicken Salad on a Croissant.
Here’s how I make mine with less fat and calories than most places where you’d order one.
{My chicken salad is 4 PointsPlus® per serving and the croissant is 6 PointsPlus® for a total of 10 PointsPlus®. That saves you 9 PointsPlus® from Panera’s sandwich and I guarantee it’s as good, if not better.}
Chicken Salad Sandwich
Serves: 6
- Two cooked chicken breasts {I boil mine, but you could bake them or even grill extras the next time you make chicken!}
- 1/2 cup Hellman’s Light Mayonaisse {Normally I’m all for whatever brand you prefer, but this has to be Hellman’s}
- 1/4 cup Sour Cream {I use fat free because I don’t want the extra fat, just the tang}
- 1 cup grapes *
- 2 stalks celery *
- 1/4 cup sliced almonds {this would also be good with pecans} *
- Salt and pepper to taste
- 6 Croissants

Preparation
Dice chicken breasts, celery and grapes into similar sized pieces

Add almonds, mayo and sour cream and mix well and season with salt and pepper

Serve on a croissant. Garnish with tomatoes and lettuce, if desired.

Looks yummy, but I will omit the grapes…do not like them…lol…lol I do like the crunch of the celery…

Yum. I’d skip the grapes and almonds though.
I always tell people I CANNOT eat anything other than Hellman’s mayo. Same with Heinz ketchup.
Oh yummy! My husband loves chicken salad sandwiches but I will have to skip on the grapes. Mmm, I’m craving for one right now.

If you want it even healthier try it with plain Greek Yogurt instead of Sour cream. Tastes identical to sour cream but has so many more health benefits. And Amen to the Helmanns!

Does anyone know how long this will last in the fridge? Thinking of making a batch at the beginning of the week for during the week, but don’t want it to go to waste…
