Sounds strange, right? That’s what I thought when my aunt first proposed making these cucumber concoctions.
Cucumber’s okay. I don’t mind it in a salad and I’ll eat a pickle every now and then. But a whole margarita of cucumber? I wasn’t convinced.
Then we (I…she was preoccupied playing with the girls) made the first batch and to my surprise they were delicious!
Give these a try for your next Ladies Night (along with some yummy Taco Dip) and it’s sure to be a hit!
Cucumber Margaritas
Ingredients
Per Margarita
- 1/4 cucumber, seeded, peeled, diced
- 2 oz Tequila{we used the cheap stuff and it was good}
- 1 oz Sweet & Sour mix
- 1 oz cup Simple Syrup {you could replace with agave nectar}
- 1/2 lime, juiced
- Ice
- Salt {optional}
Preparation
- Make your simple syrup by boiling 1 cup of sugar and 1 cup of water until sugar dissolves

- Peel, seed, and dice your cumber

- Muddle your cucumber in the bottom of your shaker
- Measure and add the tequila, sour mix and simple syrup

- Squeeze in juice from 1/2 a lime
- Add ice and shake
- If you want points for presentation, rub the squeezed lime around the rim of your glass and put in salt


- Serve on the rocks and enjoy!
