How To Cook: Grab ‘n Go Breakfast Cookies

Now that Baby O is really in to feeding herself, I need to think of healthy things to give her for breakfast.

While she loves yogurt, I don’t  love it in her hair.  I needed something easier!

After going to Toddler Tidbits with my Hy-Vee dietitian, Amanda, I got the perfect recipe!  And I love that I know it’s healthy because Amanda gave it to me.

Grab ‘n Go Breakfast Cookies

Ingredients:

  • 1/2 c. regular oats (not instant)
  • 6 T. whole wheat flour
  • 1/4 c. fiber one bran cereal, ground to a breadcrumb like consistency
  • 1/2 c. sugar {I used splenda baking mix}
  • 1/3 c. baby food peaches
  • 1/4 c. canned pure pumpkin
  • 1/4 c. fat-free liquid egg substitue {or 1 egg}
  • 1/2 c. dried mixed berries
  • 2 T. brown sugar, not packed
  • 1/2 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 1/8 tsp. salt

Preparation:

  1. Preheat oven to 375°
  2. Combine oats, flour, fiber one, sugar, brown sugar, baking powder, cinnamon, and salt in a large mixing bowl.  Mix well.
  3. Combine wet ingredients {peaches, pumpkin, egg substitute}.  Mix well.
  4. Add liquid mixture to the dry ingredients and stir until completely blended.
  5. Sprinkle in berries to the batter.
  6. Spray a large baking pan with nonstick spray and spoon batter into evenly spaced circles.
  7. Bake for 12-14 minutes {unti tops are just slightly crispy}.
  8. Grab ‘n go once cooled!

The initial recipe said the batter makes 4 large cookies.  These would have been exceptionally large since I’m feeding these to a three and one year old, so I made each batch have at least 8 cookies.

Also, since I don’t keep a lot of these ingredients on hand I went ahead and quadrupled the recipe and froze the cookies so I have plenty and pull them out in the mornings for the girls!

Hi, I really like your recipes. The breakfast bars I will try soon. Since my three oldest at home are always in a hurry in the morning, I try to always do some kind of fruit muffin where they can just grab and go and maybe take an extra for a snack at school.
