How To Cook: Pumpkin Dip

by How To Mommy on 10.12.11

Once a month the kids and I head to my local Hy-Vee to attend Toddler Tidbits class.  It’s run by the greatest dietitian ever, Amanda. She talks about child nutrition and shares healthy options with us.

Last class she had us try fruits and vegetables in a variety of colors.  She talked about how kids should be eating all colors of the rainbow and how naturally colored foods were a great way to get children interested in healthy options.

We tried pomegranate, mangoes, and yellow cherry tomatoes.  I loved them all and Little Miss R did too!  Our favorite item though was her delicious fall dip.  I’m sure you and your kids will love it too!

Pumpkin Dip

  • 3/4 cup reduced fat cream cheese
  • 1/2 cup packed brown sugar
  • 1/2 cup canned pumpkin
  • 2 tsp. agave nectar
  • 1/2 tsp. ground cinnamon
  • 3-4 apples, sliced

  1. Place first 3 ingredients in a mixer and blend until smooth
  2. Add syrup and cinnamon and beat until smooth
  3. Cover and chill 30 minutes

This is the perfect afternoon snack!  Your kids will get fruits, vegetables and dairy without even realizing it.
