How To Cook: Stuffed Peppers

This past weekend I was discussing recipes with my family and my aunt shared this Food Network recipe for Charred Chili Rellenos.

It sounded delicious!

I had envisioned something a little different in my head, so here’s my recipe!  My husband and I loved them.

Stuffed Chili Peppers

Serves 4
10 PointsPlus per serving (7 without cheese)

Ingredients:

  • 4 large poblano peppers {bell peppers will work if you can’t find poblanos}
  • 1/2 pound lean ground turkey breast {you could use ground beef, but it will affect the PointsPlus value}
  • 2 Tbsp minced garlic
  • 1/4 cup minced onion
  • 2 cups Spanish/Mexican rice, prepared according to box directions
  • 1 cup frozen corn, thawed
  • 1 1/2 cans Ro*Tel Tomatoes {diced tomatoes with green chilies}

Preparation:

  1. Broil peppers evenly for 12-15 minutes until charred on each side
  2. Cook rice according to package directions
  3. Brown turkey, onion and garlic, add seasonings according to taste {I used salt, pepper, chili powder and red pepper flakes}
  4. Add corn to cooked turkey and cook until corn browns
  5. Add Ro*Tel and cooked rice to turkey and corn mixture
  6. Slice poblano peppers on one side (do not cut through) and remove seeds
  7. Scoop 1/4 of the mixture into each pepper
  8. Top each pepper with 1/4 cup of cheese
  9. Broil until cheese is melted
  10. Enjoy!
