How To Eat Peanut Butter without the Fat

Thanks to my Mommy & Me Toddler Nutrition class, I have a new obsession.  PB2.  It is powdered peanut butter that has the fat taken out but the protein kept in.  It is all natural with no artificial sweeteners or preservatives.  It’s amazing.

Regular peanut butter has about 180 calories and about 15 grams of fat per two tablespoons.  PB2 has just 53 calories and 1.5 grams of fat for 2 tablespoons.  I am currently doing Weight Watchers and that’s a difference from a PointsPlus value of 3 to 1!

The dietitian at Mommy & Me made a delicious PB2 Fudge Pop for the kids and they all went nuts!  Ever since then, I’ve been putting it in anything and everything.  Vanilla yogurt – delicious.  Cool whip – delicious.  Chocolate protein shakes – delicious.  Now, I’m probably not going to rehydrate it for a PB&J, but any recipes you have that call for peanut butter, you can definitely substitute it and save on fat and calories, but not give up any of the flavor.

Here’s the recipe we made in class.  Your kids will love them and so will you!

PB2 Fudge Pops

Serves 6
Prep Time: 15 minutes
Freezer Time: 4 hours
Per Serving: 116 calories, 14 g. carbohydrates, 5 g. protein, 5 g. fat, 1 g. fiber

Ingredients:

  • 1 (6 ounce) package instant sugar-free chocolate pudding
  • 1 1/2 cups skim milk
  • 2 Tablespoons PB2 powder
  • 1 cup light Cool Whip
  • 1/4 cup unsalted peanuts, chopped
  • 6 Popsicle sticks

Preparation:

  1. Prepare pudding according to package directions, reducing milk according to recipe (1 1/2 cups)
  2. Stir in PB2 powder and let stand for 10 minutes
  3. Fold in Cool Whip
  4. Sprinkle chopped peanuts
  5. Insert Popsicle sticks and freeze at least 4 hours or until firm

You have to let me know what you think!  I will probably even double the PB2 next time I make it so I get more delicious peanut butter flavor!  And no, PB2 is not paying me to keep gushing about the product.  I just think it’s that good.  🙂
