How To Eat: Southwestern Chicken Salad

With summer coming it gets me in the mood to eat light, bright and flavorful.  This salad definitely does the trick.

I know you’ll love it!

Southwestern Chicken Salad

Serves: 4
4 PointsPlus™ per serving

Ingredients:

  • 2 ears of sweet corn, cut from the cob
  • 2 scallions, chopped
  • 1 can (15 oz.) black beans, rinsed and drained
  • ½ red bell pepper, chopped
  • ½ green bell pepper, chopped
  • 8 oz. cooked chicken breast, diced
  • 2 T. lime juice
  • 1 T. oil (vegetable, canola, etc)
  • 2 T. taco seasoning
  • 4 T. fat free sour cream
  • Cilantro, chopped *optional

Preparation:

  1. In large mixing bowl, add corn, scallions, beans, and peppers, mix.
  2. Add lime juice and oil, mix.
  3. Add chicken, taco seasoning, mix.
  4. Top each serving with 1 T. sour cream and cilantro.

Serve with your favorite tortilla chips and enjoy!  (I recently tried this with Sweet Potato Tortilla chips and it was delicious!)
