How To Eat: Vegan Banana Oatmeal Chocolate Chip Cookies

Trying to lose weight isn’t easy.  The cravings are always going to be there.

Sometimes all you want is a cookie!

But there are always better choices that can be made than grabbing the nearest Chips Ahoy.

And who would know healthy cookies better than the Skinny Girl herself, Bethenny Frankel?

These cookies will satisfy your cravings without ruining your diet!

Vegan Banana Oatmeal Chocolate Chip Cookies

Makes 8 cookies

Ingredients:

  • 1 cup raw organic sugar {using Splenda would cut the calories even further}
  • 2 teaspoons vanilla
  • 2 ¼ cup oat flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup of vegetable oil
  • 1 cup dark chocolate chips
  • ¾ cup mashed overripe banana (≈1 large banana)

Instructions:

  1. Preheat oven to 350° F
  2. Combine all ingredients in a medium sized bowl.
  3. On a non-stick cookie sheet (or line a cookie sheet with parchment paper), scoop batter with a medium sized ice cream scoop.  Space cookies evenly on baking sheet.
  4. Cook 35 minutes, rotating halfway through.  The cookies should have a slightly brown edge and come out clean when poked with a toothpick.
