How To Get Your Veggies: Sweet Potato Spinach Smoothie

Recently, a friend was telling me how she was able to sneak veggies into her son’s breakfast smoothies and he couldn’t get enough of them!

I tried this in my mini-food processor to no avail.  The spinach was still very noticeable and the processor could hardly break up the frozen fruits and vegetables.

Then I was introduced to the mac-daddy of all blenders, the GE Rocket Blender.  The best news, it won’t break the bank!  At $19.88, this fits into even the tightest of budgets.

Bring on the blending!

Here’s a recipe for a delicious smoothie that is chocked full of fruits and veggies and a serving of dairy.  With the proper blending, your kids will think you’re feeding them a decadent shake instead of something that is good for them!

Sweet Potato Spinach Smoothie

Ingredients:

  • 1 oz. frozen sweet potato puree (if you freeze your puree in ice cube trays, each cube is approximately 1 ounce)
  • ½ – ¾ c. fresh spinach leaves
  • ½ banana
  • 3-4 fresh strawberries (can substitute with frozen berries)
  • 6 oz. vanilla yogurt
  • Splash of milk

Preparation:

  1. Roughly slice strawberries, banana and sweet potato and place in blender.
  2. Add remaining ingredients.
  3. Blend and enjoy!
