I‘m sure by now you’ve all tried my delicious Baked Potato Soup with cauliflower.
I bet you’re thinking, “How To Mommy, my family is getting their veggies and I’m feeling great about the food I’m making, I need more recipes!”
Ask and it shall be answered. The dietitian at my Mommy and Me Toddler Nutrition classes gave us a recipe for brownies with black beans.
They are delicious! You’d never know you left out the oil and eggs.
Black Bean Brownies
- 1 Box Brownie Mix (I even used generic, so get whatever you like!)
- 1 can Black Beans
- 1/4 cup Powdered Sugar
Pre-heat oven to 350° Pour black beans in a strainer and rinse well. Place beans back in the can and fill with water. Empty black beans (with water) into a blender or food processor and blend well.
Combine processed black beans with the brownie mix. Mix well. Pour batter into a greased 9×13 pan. Bake for 30 minutes. Dust with powdered sugar. Serves 20.
These brownies have been approved by one aunt, one sister, and one playgroup. No one knew they were loaded with fiber and missing the oil!
You can finally give your kids a snack they want and know they’re getting some vegetables. And the best part, you don’t need to feel guilty when you have a few too!
