How To Lighten Up Your Brownies

Ever since having the Black Bean Brownies, I’ve been craving a “healthy” new brownie recipe.

Well ladies (and gentlemen), I have found it. Cheesecake Brownies. Doesn’t sound healthy, right?

It is! Instead of the eggs and oil you use pumpkin!

I know…adding a vegetable and taking out the fat. I’m in.  Here’s the recipe:

Cheesecake Brownies

Ingredients

  • 1 (18 ounce) box Pillsbury Devil’s Food cake mix
  • 1 (15 ounce) can pumpkin
  • 6 ounces fat free cream cheese, room temperature
  • 1/4 cup Splenda granular (see note 1)
  • 1 teaspoon powdered french vanilla fat free non-dairy coffee creamer (see note 2)
  • 2 tablespoons warm water (see note 2)
  • 1/2 teaspoon vanilla extract

Preparation

  1. Preheat oven to 400 degrees.
  2. Prepare a 9″ X 13″ baking pan by coating it with nonstick cooking spray.
  3. In a large mixing bowl, combine cake mix and pumpkin. Stir until completely blended (the mixture will remain very thick).
  4. Using a spatula, spread batter into pan and set aside.
  5. Dissolve powdered coffee creamer in the water.
  6. Combine softened cream cheese with Splenda, coffee-creamer mixture, and vanilla extract. Mix vigorously until completely blended, smooth and lump-free.
  7. Spoon cheesecake mixture over the brownie batter, and use a knife to swirl it into the batter. (Don’t worry if your swirl isn’t perfect — your brownies will taste delicious no matter what!)
  8. Place pan in the oven, and bake for 20 – 25 minutes. Allow to cool, and then cut into 16 pieces.

*Note 1* I don’t like using Splenda in recipes for the kids, so I replaced this with 1/6 cup (just don’t fill the 1/4 cup all the way) Agave Nectar. It’s an all natural sweetener.
*Note 2* If you have liquid sugar free/fat free coffee creamer, use 2 tablespoons, omitting the powdered creamer and water. Also, you can omit this and just add 1 teaspoon vanilla extract.
