How To Cook: Meal Planning Mondays

Even though Finding Hope and I no longer do our weekly link up for our Meal Planning Monday, I knew this week was going to be SO busy that I would need to meal plan in order to ensure we’re eating healthy food all week instead of resorting to take out.

I’m co-chairing my church’s Vacation Bible School so the week will be a lot busier than normal, which is why meal planning is great. At the end of a long day – I don’t have to think about what’s for dinner.

Here’s what is in store for us:


Roasted Vegetables


Steak Quesadillas {with leftover steak}
Refried Beans


Macaroni and Blue Cheese
{I made this a few weeks ago and it was so good, I needed more}
Spinach Salad with Olive Oil and Raspberry Blush Vinegar Dressing


Chicken Acapulco
{This recipe is very similar to mine, only I use monterrey cheese and not swiss}
Brown Rice
Green Beans


Mom get’s a girl’s night so they are having dad’s specialty:
Hot Dogs
String Cheese


Dad get’s a guy’s night so we are having a pizza play date with some friends.


Dinner at my parents’ house.

having a plan in place makes life go so much more smoothly. How did the week go? I’m looking at the mac & blue cheese recipe. thanks for sharing!
