
I’m co-chairing my church’s Vacation Bible School so the week will be a lot busier than normal, which is why meal planning is great. At the end of a long day – I don’t have to think about what’s for dinner.

{I made this a few weeks ago and it was so good, I needed more}
Spinach Salad with Olive Oil and Raspberry Blush Vinegar Dressing
Thursday
Chicken Acapulco
{This recipe is very similar to mine, only I use monterrey cheese and not swiss}
Brown Rice
Green Beans
Friday
Mom get’s a girl’s night so they are having dad’s specialty:
Hot Dogs
String Cheese
Grapes
Saturday
Dad get’s a guy’s night so we are having a pizza play date with some friends.
Sunday
Dinner at my parents’ house.
