How To Eat: Northshore Chicken Salad

I had this salad at a friend’s Bridal Shower a few years ago and it is still one of my very favorite recipes!

It’s healthy, filling and delicious.

With no mayo, this is a perfect salad for summer BBQ’s and potlucks.

Even though the recipe looks a little difficult, I promise it’s not!

North Shore Chicken Salad

Serves: 8     PointsPlus™ Value: 6


  • 1/4 c. rice vinegar
  • 2 cloves garlic, minced
  • 1/2 tsp. salt
  • 1 T. Dijon mustard
  • 1/4 tsp. sugar
  • 1/4 tsp. ground pepper
  • 1/3 c. vegetable oil
  • 4 c. cooked wild rice, cooked in chicken broth
  • 1 1/2 c. chopped, cooked chicken
  • 1/2 c. diced red bell pepper
  • 1/2 c. fresh snow pea pods, cut in 1 inch pieces
  • 3 green onions, chopped
  • 2 T. lemon juice
  • 1 avocado
  • 1 c. pecan halves, toasted
  • Lettuce leaves

For Dressing:

  1. Place vinegar, garlic, mustard, salt, pepper and sugar in the container of an electric blender.
  2. Cover and process until thoroughly blended.
  3. With blender running, gradually add oil in a steady stream.
  4. Process 30 seconds or until thickened.
  5. Set aside.

For Salad:

  1. In a large bowl, place wild rice, chicken, bell pepper, snow peas, green onion and lemon juice; toss gently to mix.
  2. Pour dressing over all and toss gently.
  3. Cover and chill 4 hours.
  4. Just before serving, peel avocado; remove pit and dice fresh into 1-inch pieces.
  5. Add avocado pieces and pecans to salad and mix gently.
  6. Serve over lettuce leaves.

**Truth time: I didn’t take this photo, as I’m not making this salad again till next week for a family reunion.  My recipe does not have tomatoes, but I’m sure they’d be tasty if you add them.  🙂
